Two tacos, no guacamoles

Guacamole is one of my all time favorite snacks. Of course I love it because it's so simple and fun to make. Just a bunch of ingredients mashed together into something delicious.

Alex hates it. Or so he says. He's never tried it, so I'm not sure he actually knows that he hates it. But he won't try it, so it's up to me. The other night when Alex and I had Joe over for taco night, I whipped some up for topping and snacking.

Everyone has their own recipe, but here is mine. I always skip the garlic and the peppers. I like it simple and mostly tomato and avocado.

Simple Guacamole
Serves 2
  • 1 ripe avocado
  • 1/4 cup chopped red onion
  • 1/4 cup chopped tomato
  • 1 tablespoon cilantro leaves, finely chopped
  • 1/2 teaspoon salt
  • A dash of freshly grated black pepper
  • Juice from 1/4 lime
  1. Cut avocado in half.
  2. Remove pit.
  3. Scoop out avocado from the peel with a spoon.
  4. Put in a small mixing bowl and mash using a fork.
  5. Add the chopped onion, tomato, cilantro, lime juice, salt, and pepper and mix.
