I've gone to look for America

I love Independence Day. It's one of my favorite holidays. America, fireworks, patriotic songs, the 4th of July is hard to beat. When we were little, we always spent the day outside, barbecuing in the backyard, hanging out, and playing with sparklers. Then we spent the night at Sherburne School field watching the town fireworks, which were followed by a huge, ecologically-damaging bonfire. It was great.

Nothing is better than a good cookout on the 4th, even in the city where outdoor spaces and grills are hard to come by. Every year we try to do a little indoor cookout with all of our bbq favorites: hot dogs, hamburgers, chips, baked beans, pasta salad, and flag cake. This year will be no exception!

Tasty Pasta Salad (by me)
  • 1/2 lb Penne Pasta
  • 1/2 cup fat free Italian salad dressing
  • 1/2 cup Parmesan cheese
  • 1 cup broccoli
  • 1 yellow bell pepper
  • 2 small tomatoes
  • salt, to taste
  • pepper, to taste
Directions
  1. Boil water and cook pasta till it is al dente.
  2. Drain and rinse pasta with cold water to stop it from cooking.
  3. Transfer pasta to a large mixing bowl and place in the fridge while you cut up your vegetables.
  4. Cut broccoli and chop tomatoes and peppers, into bite sized pieces.
  5. Remove pasta from the fridge.
  6. Add salad dressing and Parmasean cheese to pasta and stir.
  7. Mix in vegetables and stir till everything is evenly coated.
  8. Chill for 2 hours (this is one of those dishes that gets better with time!)
  9. Remove from fridge right before serving and mix.
  10. Serve and enjoy!
