Enchilada desparado days

Alex and I love all things Mexican, especially the food. My favorite part about Mexican food is that it eats like junk food, but is actually made up of healthy ingredients. On Saturday night, Alex and I had tacos for dinner and with the leftovers and a pint of strawberries, I decided to whip up some strawberry salsa for the rest of the week.

I love making salsa because it is one of those recipes where you can kind of throw anything from your fridge in, and it will work as long as you include cilantro, lime juice, and salt. It takes a lot of chopping, but its well worth the time and effort. This was my recipe for strawberry salsa this time, but it’s different every time I make it because sometimes I substitute in green peppers, mangoes, pineapple, or whatever else I have lying around.

Summer Strawberry Salsa (by me)
  • 1 pint fresh strawberries
  • 1/2 medium red onion
  • 1/2 yellow bell pepper
  • 1/2 vine ripened tomato
  • 1/4 cup fresh cilantro leaves
  • 2 tablespoons fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/2 tsp of salt
  • 1 jalapeño pepper, minced (optional)
  1. Clean your strawberries, bell pepper, tomato, jalapeño pepper, and cilantro leaves.
  2. Hull and chop your strawberries and place in a medium mixing bowl.
  3. Chop your red onions, bell peppers, and jalapeño pepper and combine in mixing bowl with strawberries.
  4. Remove and discard the stems of your cilantro, finely shred, and set aside.
  5. Add orange juice, lime juice, cilantro, and salt and combine until evenly mixed.
  6. Cover and refrigerate for 2 hours.
  7. 5 minutes before serving, remove the salsa from the refrigerator and stir.
  8. Serve with tortilla chips and enjoy!

  2. We made some of this a few weeks back. It is absolutely fantastic! Something about the strawberries gives it a summer taste, but the lime keeps it tasting like salsa. Mmmmmm ... so good!
